November 4th, CHARCUTERIE BASICS (Spicing, Curing, Fermenting, Aging and Smoking Cooked and Uncooked Meat)

9am – noon.  Amador County GSA Building, 12200-B Airport Road, Jackson

$10.00 payable at the door.  Lecture will include: types of meat, spices, cultures, fermenting, smoking and equipment.  Demonstration will include making pepperoni, smoked salmon, dried salmon, Canadian bacon and corned beef/venison.
